Nov. 28th, 2002 09:53 amPecan pie was made two days ago. This morning, I prepared the baked yams-and-apples and the waldorf salad. In a moment, I'm going to start the pumpkin pies. When those are done, I'll prepare the stuffing and the turkey. (I'm not baking the stuffing in the turkey this year, just for ease and speed.) The house is still fairly messy, my sweetie's busy tidying.
I have rheumatoid arthritis and can't stand up for long periods of time, so it's one step then rest, another step then rest.
But to make this relevant, I'm thinking, "I might just have this in control! I can get dinner prepared and be able to socialize when my guests arrive!"
And what's this I'm feeling? Cramps! My period will start any minute! Oh well. . . . :)

Date: 2002-11-28 11:01 pm (UTC)I don't peel the apples, but I core them, then cut them into bite-sized pieces. The peels are important for color. Also, the variety of types of apple gives different flavors and colors. I core the pear, cut it into bite sized pieces. I cut up a stalked or two of celery into small bite-sized pieces.
I toss all that with about half the pecans. Then I mix either the some of the juice from the mandarin orange can or a little bit of orange juice with some *plain* yogurt until it's runny like dressing. I toss that into the salad until everything's coated.
I top it with the drained canned orange slices and the rest of the pecans.
A huge chunk of naproxen, much food, a little wine, and two Instead-loads later, and I survived a menstrual Thanksgiving intact. :)
